Calcium Propionate

Introduction: 

Calcium propionate is white light scaled crystal or white powder,is odorless or has slight smell of propionic acid,and is stable under heat and light.It is easy to deliquesce when being exposed in air,is easily soluble in water,is slightly soluble in ethanol and diethyl ether,and is nearly not soluble in benzene and acetone.Calcium propionate can produce free propionic acid in products and has strong inhibitory action on aspergillus riger,aerobic endospore-producing bacteria and some specific bacteria. It can be widely applied  to  foods,breads,cakes,mooncakes,mooncake stuffing,vinegar, soy,bean products and spicy and hot foods to prolong the shelf life of products.

 

Thanks to its characteristics of low cost and harmlessness to human body,calcium propionate has been widely applied to foods.When being used in western pastries,it can react with sodium bicarbonate in leavening agent to generate insoluble calcium carbonate to reduce the production amount of COz,so that calcium propionate is recommended.
